Mexico Baby!!

So we did it! We successfully went on vacation sans Carter Man. A couple months back we were talking with Katie and Ryan and decided that we should go somewhere for spring break to celebrate our five year weddings anniversaries. I still can't believe I agreed to spend a week away from Carter and actually did it!!
We stayed at the NOW Jade  and it.was.amazing!! Don't get me wrong we missed our little man everyday but it was really nice to reconnect and be "Matt and Laura" instead of just "mom and dad." We were gone for a full seven days and it was the perfect length of time to be gone - we were definitely ready to see Carter by the end of the week. The nice thing was that we didn't have a lot planned while we were in Mexico so the days didn't fly bye. We literally laid out by the pool and relaxed, drank (except for Katie :) ), and ate almost the entire week.

On Monday, the 28th we went to Chichen Itza. I was really excited about this because it was recently named one of the New Seven Wonders of the World. Unfortunately, I didn't know (and Katie and Ryan didn't remember) that is was a 2 1/2 hour bus ride! It was worth it though, the ruins were incredible.



After lunch at a hotel near the ruins, we went for a swim in a local cenote, which felt great because the temp at Chichen Itza was 105 degrees. The cenote is a natual sink hole and the fresh water is 150 feet deep and super clear. Both Matt and I jumped off a cliff while Katie watched from below :). We didn't get home until 7 pm so we were happy to be back at the pool the next day.

We also went on a snorkeling tour through the hotel. This is huge for me because of my fear of fish. It was perfect because Puerto Morelos was just ten minutes away from the hotel  and the whole excursion was just two hours. We went to the coral reef and saw a ton of fish. Luckily for me, most of the fish stayed by the reef as we just observed from above. We saw a some yellow stingrays and some really big schools of fish. A couple fish got a little too close and I freaked out but luckily Matt was nearby.



In the evenings we dined at one of the five restaurants in the hotel, which included Asian, Mediterran, Mexican, French and Italian cuisines. They were all fabulous but our favorite was the Mediterran restaurant CinCin. It was very fancy with ingredients like "light ash"   and it had THE BEST soup ever! We actually ate there twice instead of trying the French restaurant. The amount of food we ate while we were there was insane. It was all inclusive so we ATE!  We usually had an appetizer, main course and dessert (even if we were full) for almost every meal. I had to do a major eating detox once I returned home :).

The entire week was easy going with almost no technology to distract us and it was just SO relaxing. But truth be told one of my favorite parts of the week was watching excited Carter running to me at the airport to welcome me home :). I love that boy!
